Fresh, healthy and clean eating...
Flank steak marinated with Miso paste, Soba (Buckwheat) noodles cooked in green tea. Served with tender stem broccoli, spring onions, sesame seeds and sesame oil.
For me, this recipe is what I think of when picturing a healthy and balanced meal. Eating "clean" doesn't mean it has to bland or dull, and this easy recipe certainly delivers in flavour. The green tea adds a subtle yet warming note to the noodles, rounding them off in an earthy backdrop contrasting the rich miso marinated steak.
You could use whatever steak you like, I like using flank steak for its lean and deep umami flavour, plus flank steak marinates really well due to its dense muscle structure. Miso paste has to be one of my favourite ingredients, not only for the fact that it's delicious, it keeps for months! Miso gets better with age the longer you leave it, the paste is made using Soybeans and fermented with a few other ingredients, so the fact that it has live cultures means that it will never go off if treated correctly. Think of it as a store cupboard ingredient but also as an investment. If you can't get any Dashi stock or powder and or you don't want to order online, you could substitute with good chicken stock or broth.
